Sweet water signals arrival of spring

One Marquette restaurant has a unique way of marking the arrival of spring.

Maple sap served as part of the inspiration for the name of the Sweet Water Cafe, so the restaurant has sweet water on the menu in the spring.

The sweet water is freshly drawn from local maple trees, and it’s purified naturally by the trees.  Sweet water is a bit cloudy because of additional minerals and electrolytes.  Forty gallons of it have to be boiled down to produce one gallon of fresh maple syrup.

The Sweet Water Cafe is about to celebrate its 20th birthday.  The restaurant opened in May of 1993.
